Warm your soul with a classic Mexican dish! This Beef Enchilada Recipe is easy to follow, bursting with flavor, and guaranteed to satisfy.
1 pound ground beef 1 onion, diced 1 clove garlic, minced 1 Can crushed tomatoes 1 Can diced tomatoes with green chiles** 1 tablespoon chili powder 1 teaspoon cumin ½ teaspoon salt ¼ teaspoon black pepper 8 corn tortillas 2 cups shredded cheddar cheese
Brown the Beef
Heat oil in a large skillet. Cook your ground beef with diced onion and garlic until browned and crumbly. Drain any excess grease.
Simmer the Enchilada Sauce (158 characters):
Stir in crushed tomatoes, diced tomatoes (optional), chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
Warm Your Tortillas
Warm your corn tortillas in a skillet or microwave for a few seconds each. This makes them pliable and prevents cracking when rolling.
Assemble Your Enchiladas
Spread some enchilada sauce in your baking dish. Fill each warm tortilla with your seasoned ground beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the dish.
Cheese & Bake to Perfection
Pour remaining enchilada sauce over the rolled enchiladas. Top generously with shredded cheddar cheese. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
